This slow cooker honey garlic chicken is sweet, savory, and tender, cooked with a rich honey garlic sauce perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken thighs (or breasts)
  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce (or tamari)
  • 4 cloves garlic, minced
  • 2 tablespoons ketchup (or 1 tablespoon tomato paste plus 1 teaspoon sugar)
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 teaspoon toasted sesame oil (optional)
  • 1/2 teaspoon black pepper
  • Pinch red pepper flakes (optional, for heat)
  • 1 1/2 tablespoons cornstarch + 1 1/2 tablespoons water (to thicken)
  • Sliced green onions and sesame seeds, for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Lightly spray the slow cooker insert or line it for easy cleanup.
  2. In a bowl, whisk honey, soy sauce, garlic, ketchup, vinegar, sesame oil, black pepper, and red pepper flakes (if using).
  3. Place chicken in the slow cooker. Pour the sauce over the top and turn pieces to coat well.
  4. Cover and cook on Low for 240–300 minutes or on High for 120–180 minutes, until the chicken is tender and reaches 165°F inside.
  5. Transfer chicken to a plate. Shred with two forks or slice into chunks.
  6. Stir cornstarch with water to make a slurry. Pour the cooking sauce into a small pot (or leave it in the slow cooker). Stir in the slurry. Simmer on the stovetop for 2–3 minutes until glossy and thick, or set the slow cooker to High for 15–20 minutes, stirring once.
  7. Return chicken to the thickened sauce and toss to coat. Garnish with green onions and sesame seeds. Serve over rice or noodles.

Notes

For best texture, use chicken thighs. Check breast cooking time early to prevent dryness. This dish is fantastic for meal prep and tastes great reheated.
