Ingredients

Scale
  • 2 1/2 cups (320g) all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup (230g) unsalted butter, very cold and cut into small cubes
  • 6-8 tbsp ice water
  • 6-7 medium apples (about 3 lbs), a mix of tart and sweet, peeled, cored, and sliced
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (optional, for sprinkling)

Instructions

  1. Make the crust: In a large bowl, whisk together the flour, salt, and sugar until well combined. Add the cold butter cubes and cut into the flour until it resembles coarse crumbs. Gradually add ice water until the dough just comes together. Divide into half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Prepare the filling: Toss sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice until coated.
  3. Preheat the oven to 425°F (220°C).
  4. Assemble the pie: Roll out one dough disk, place it in a pie dish, and add the apple filling. Roll out the second dough disk, cover the filling, crimp the edges, and cut slits for steam. Brush with beaten egg and sprinkle with coarse sugar.
  5. Bake: Bake for 20 minutes at 425°F, then reduce to 350°F (175°C) for 35-45 minutes until golden and bubbly.
  6. Cool for 2 hours before serving.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free blend. To make it vegan, replace butter with coconut oil and use a flax egg.
