Ingredients

  • 1 lb ground turkey or chicken
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes (with green chilies if you like it spicy)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 packet taco seasoning
  • 3 cups chicken or vegetable broth
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions

  1. In a large pot, brown the ground turkey (or your chosen protein) over medium heat, breaking it apart as it cooks.
  2. After about 5-7 minutes, add the taco seasoning and stir to combine.
  3. Pour in the diced tomatoes, corn, and black beans.
  4. Add the broth and bring the mixture to a gentle boil.
  5. Reduce the heat and let it simmer for 15-20 minutes to let the flavors meld together.
  6. Serve hot, topped with your favorite garnishes!

Notes

For a vegetarian version, skip the meat and add extra beans or lentils. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to three months.
