A delicious quesadilla packed with protein, featuring shredded chicken and zesty ranch dressing, perfect for a quick meal any time of the day.

Ingredients

  • 2 whole wheat tortillas
  • 1 cup cooked chicken breast, shredded
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup ranch dressing
  • Salt and pepper, to taste
  • Optional toppings: green onions, diced tomatoes

Instructions

  1. Combine shredded chicken, ranch dressing, salt, and pepper in a bowl. Mix well.
  2. Heat a non-stick skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle half of the cheese on top.
  4. Layer the chicken mixture evenly over the cheese.
  5. Sprinkle the rest of the cheese on top and place the second tortilla over the filling.
  6. Cook for about 3-4 minutes, until the bottom tortilla is golden brown, then flip the quesadilla carefully.
  7. Cook for another 3-4 minutes until the other side is crispy and the cheese has melted. Slice and serve warm.

Notes

For extra crispiness, use cooking spray or a small amount of oil in the skillet. Store leftovers in an airtight container for up to 3 days.
