Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup chicken or vegetable broth
  • 1 cup milk (or a non-dairy alternative)
  • 1/2 cup Greek yogurt
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Stir in the minced garlic and cook for another minute.
  3. Add broccoli florets and broth to the pot. Bring to a simmer and cook until the broccoli is tender, about 5-7 minutes.
  4. Reduce heat and stir in milk and Greek yogurt. Mix well until heated through.
  5. Slowly add shredded cheddar cheese, stirring until melted and smooth.
  6. Season with salt and pepper to taste. Serve warm.

Notes

For a smoother consistency, blend half of the soup. Store leftovers in an airtight container in the fridge for up to 3-4 days.
