A quick and delicious hibachi-inspired chicken fried rice that combines tender chicken, crisp vegetables, and flavorful rice in one easy dish.

Ingredients

  • 2 cups cooked white rice (preferably day-old)
  • 1 pound chicken breast, diced
  • 1 cup mixed vegetables (like peas, carrots, and corn)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Optional: sesame oil for drizzling

Instructions

  1. Heat a large skillet or wok over medium-high heat and add the vegetable oil.
  2. Add the diced chicken and cook until it’s golden brown and cooked through, about 5-7 minutes.
  3. Add the minced garlic and grated ginger, stirring for an additional minute until fragrant.
  4. Toss in the mixed vegetables and cook for another 3-4 minutes until they are tender.
  5. Add in the cooked rice, soy sauce, and sliced green onions. Stir well to combine.
  6. Cook everything together for another 2-3 minutes, allowing the flavors to meld.
  7. Season with salt and pepper to taste, and drizzle with sesame oil before serving.

Notes

For best texture, use leftover rice that has had time to cool. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
