A refreshing twist on classic egg salad with creamy avocado and fresh herbs.

Ingredients

  • 4 hard-boiled eggs
  • 1 medium avocado
  • 2 tablespoons mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Start by peeling and chopping the hard-boiled eggs into bite-sized pieces.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  3. Mash the avocado until smooth, and then stir in the mayonnaise and mustard.
  4. Add in the chopped eggs to the avocado mixture and gently combine.
  5. Stir in the fresh dill, parsley, and season with salt and pepper to taste.
  6. Serve immediately, or chill in the refrigerator for 30 minutes to allow the flavors to meld.
  7. Enjoy it on toast, in a sandwich, or with some crisp lettuce!

Notes

To ensure the best texture, do not over-mash the avocado; leave some small chunks for extra creaminess. Best eaten fresh.
