A wholesome minestrone soup rich with vegetables, beans, and herbs, perfect for chilly days or nutritious meals.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can diced tomatoes (15oz), canned or fresh
  • 4 cups vegetable broth
  • 1 can kidney beans (15oz), drained and rinsed
  • 1 cup pasta (small shapes like elbow or ditalini)
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, and celery. Sauté for about 5 minutes until they start to soften.
  3. Stir in minced garlic, zucchini, and green beans. Cook for an additional 3-4 minutes.
  4. Add diced tomatoes, vegetable broth, beans, and Italian seasoning. Bring to a boil.
  5. Stir in the pasta and let it simmer until the pasta is cooked, about 10 minutes.
  6. Season with salt and pepper to taste. Serve and enjoy!

Notes

Use a large pot for space. For thicker soup, add more pasta or reduce broth slightly. Store leftovers in an airtight container.
