A warm and comforting black bean soup that’s packed with flavor and nutrition. Perfect for weeknight dinners or meal prep.

Ingredients

  • 2 cans of black beans (drained and rinsed)
  • 1 onion (chopped)
  • 2 cloves of garlic (minced)
  • 1 bell pepper (chopped)
  • 1 tsp cumin
  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, sour cream

Instructions

  1. In a large pot, heat a bit of oil over medium heat.
  2. Sauté the chopped onion, garlic, and bell pepper until softened, about 5 minutes.
  3. Add the black beans, cumin, broth, salt, and pepper to the pot.
  4. Bring to a simmer and cook for about 20 minutes, stirring occasionally.
  5. Using a blender, carefully blend half the soup until smooth, then stir it back into the pot.
  6. Serve hot with your favorite toppings!

Notes

Store any leftover soup in an airtight container in the fridge for up to 3 days. It also freezes well for later enjoyment.
