  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, sliced
  • 1/4 cup walnuts or almonds (optional)
  • 1/4 cup feta cheese (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the spinach, cherry tomatoes, red onion, cucumber, and nuts (if using).
  2. In a small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper to create the dressing.
  3. Drizzle the dressing over the salad and toss gently to combine.

Notes
