A quick, nutritious, and colorful salad packed with protein and vitamins, perfect for any meal.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium pot, combine quinoa and water (or broth) and bring to a boil.
  3. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy.
  4. Meanwhile, chop the cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  5. In a large bowl, combine the cooked quinoa and chopped vegetables.
  6. Drizzle olive oil and lemon juice over the salad, and season with salt and pepper. Toss everything together.
  7. Serve immediately, or refrigerate for later enjoyment.

Notes

Let the salad sit for about 10 minutes after making to allow flavors to meld. Store leftovers in an airtight container for up to 3 days.
