  • 1 whole chicken or chicken parts (thighs, breasts)
  • 6 cups chicken broth
  • 2 cups sliced carrots
  • 1 cup diced celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs like thyme or parsley

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery, cooking until soft (about 5-7 minutes).
  2. Add the chicken to the pot, followed by the chicken broth. Bring to a boil.
  3. Reduce heat and let it simmer for about 30-40 minutes until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Season with salt, pepper, and any fresh herbs you desire. Serve warm.

Notes

For a vegetarian version, use vegetable broth and chickpeas instead of chicken. Feel free to add noodles or rice for extra heartiness.
