A healthy and hearty one-pan meal featuring ground turkey, black beans, zucchini, and tomatoes, seasoned with cumin and chili powder.

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add ground turkey to the skillet and cook until browned, breaking it up with a spoon.
  3. Stir in diced onion and garlic, cooking until fragrant.
  4. Add diced zucchini to the skillet and cook until slightly softened.
  5. Mix in black beans, diced tomatoes, cumin, chili powder, salt, and pepper.
  6. Stir well to combine.
  7. Let the mixture simmer for about 10-15 minutes, allowing the flavors to meld together.
  8. Garnish with fresh cilantro and serve with lime wedges on the side.

Notes

Serve over rice or quinoa for a more filling meal. Can be stored in the fridge for up to 3 days or frozen for up to 3 months.
