A fresh, vibrant Greek salad packed with vegetables, feta cheese, and olives, perfect for warm weather dining.

Ingredients

  • Ripe tomatoes
  • Cucumber
  • Red onion
  • Bell peppers (any color)
  • Kalamata olives
  • Feta cheese
  • Olive oil
  • Red wine vinegar
  • Oregano
  • Salt
  • Pepper

Instructions

  1. Start by washing all fresh vegetables thoroughly.
  2. Chop the tomatoes, cucumber, and bell peppers into bite-sized pieces.
  3. Slice the red onion thinly, and if it’s too strong in flavor, soak it in cold water for a few minutes.
  4. In a large mixing bowl, combine the chopped vegetables, olives, and crumbled feta cheese.
  5. Drizzle with olive oil and red wine vinegar, and sprinkle with oregano, salt, and pepper to taste.
  6. Toss the salad gently to combine, making sure all ingredients are coated with the dressing.
  7. Serve immediately or let it chill in the refrigerator for a short while to let the flavors meld.

Notes

For a vegan version, use plant-based feta. You can add chickpeas or quinoa for extra protein.
