Gooey Chocolate Pumpkin Spice Bars

Delightful bars combining chocolate and pumpkin flavors, perfect for fall or any occasion.

  • 1 cup unsalted butter, melted
  • 1 1/2 cups brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup pumpkin purée
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips (optional)
  • 1/2 cup mini chocolate chips (for topping)
  • 2 tbsp caramel sauce (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, whisk melted butter and brown sugar until smooth. Add eggs, vanilla, and pumpkin purée, mixing until combined.
  3. In another bowl, whisk together flour, pumpkin spice, cinnamon, baking powder, and salt. Gradually fold the dry mixture into the wet ingredients.
  4. Stir in semi-sweet chocolate chips (and white chocolate chips if using). The batter will be thick and gooey.
  5. Spread the batter evenly into the prepared pan. Sprinkle mini chocolate chips on top.
  6. Bake for 28–32 minutes, until edges are set but the center is still slightly soft.
  7. Cool in the pan for 20–30 minutes before cutting into bars. Drizzle with caramel sauce if desired.

Notes

For the best results, make sure your butter is melted but not hot to avoid cooking the eggs. Don’t overmix the batter.
