A hearty, flavorful Gluten-Free Taco Soup packed with protein-rich beans, colorful veggies, and zesty taco seasoning, perfect for any occasion.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn kernels (fresh or frozen)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 2 tablespoons taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, sauté onion and garlic over medium heat until softened.
  2. Add bell pepper and cook for an additional 2-3 minutes.
  3. Stir in black beans, kidney beans, diced tomatoes, corn, vegetable broth, and taco seasoning.
  4. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh cilantro if desired.

Notes

For extra depth of flavor, add a splash of lime juice before serving. Allow the onions and garlic to become translucent for a sweeter taste. For a thicker stew-like texture, let it simmer longer or mash some beans.
