  • 1 cup packed brown sugar (light or dark)
  • 4 tablespoons unsalted butter
  • 1/2 cup sweetened condensed milk (ensure gluten free)
  • 1/4 cup light corn syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 cup chopped nuts (optional, ensure gluten free)
  • Wooden sticks or skewers

Instructions

  1. Wash and thoroughly dry the apples, removing stems. Insert wooden sticks into each apple.
  2. Line a baking sheet with parchment paper.
  3. In a medium saucepan, mix brown sugar, butter, sweetened condensed milk, and corn syrup over medium heat.
  4. Stir constantly until the mixture comes to a gentle boil.
  5. Continue boiling, stirring frequently, until it reaches 245°F (soft-ball stage).
  6. Remove from heat and stir in vanilla extract and sea salt.
  7. Dip each apple into the hot caramel and coat evenly. Optionally, roll in chopped nuts.
  8. Place on the lined baking sheet and let cool for at least 1 hour before enjoying.

Notes

Make sure your apples are very dry before dipping; moisture can prevent the caramel from sticking well. Use a candy thermometer for accurate temperature measurement.
