Garlic Butter Steak Bites

Quick and juicy steak bites coated in rich garlic butter, perfect for any occasion.

Ingredients

  • 1.5 lb (680 g) sirloin or ribeye, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 2 tablespoons olive oil or avocado oil, divided
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice (optional)
  • Pinch red pepper flakes (optional)

Instructions

  1. Pat the steak cubes very dry with paper towels.
  2. Season with salt, pepper, and smoked paprika. Toss to coat evenly.
  3. Heat a large heavy skillet over medium-high heat until very hot, 2–3 minutes.
  4. Add 1 tablespoon oil. Add half the steak in a single layer.
  5. Sear without moving for 1–2 minutes, then flip and cook 1–2 minutes more, until browned on both sides.
  6. Transfer to a plate and repeat with remaining oil and steak.
  7. Reduce heat to medium-low. Add butter to the skillet.
  8. When melted and foamy, add garlic. Cook 30–45 seconds until fragrant.
  9. Return all steak bites to the skillet. Toss in the garlic butter 30–60 seconds.
  10. Turn off heat. Stir in parsley and lemon juice. Taste and adjust salt. Serve hot.

Notes

For a variation, try adding sautéed mushrooms or a Cajun twist with Cajun seasoning.
