  • 2 large sweet potatoes, peeled and cut into 1/2-inch thick rounds
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Mix melted butter with minced garlic, salt, and pepper. Brush both sides of each sweet potato round with the garlic butter mixture.
  3. Arrange the rounds in a single layer on the prepared sheet and roast for 20–25 minutes, flipping halfway, until tender and lightly browned on the edges.
  4. Sprinkle Parmesan cheese over the rounds during the last 5 minutes of roasting, allowing it to melt and turn golden.
  5. Transfer to a serving platter, slightly overlapping the rounds, and sprinkle with fresh parsley before serving.

Ensure sweet potatoes are cut consistently for even cooking. Adjust garlic quantity to taste for stronger flavor. Consider broiling for a crispy texture.
