Garlic Butter Chicken Thighs make a simple, tasty meal any night with crispy skin and a rich garlic butter sauce.

Ingredients

  • 6 bone-in, skin-on chicken thighs (about 22.5 lbs)
  • Salt and black pepper, to taste
  • 1 tsp paprika (optional)
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 5-6 garlic cloves, minced
  • 1/2 cup low-sodium chicken broth or white wine
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh thyme leaves or 1/2 tsp dried thyme
  • 2 tbsp chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) if finishing in the oven.
  2. Pat chicken thighs dry with paper towels. Season both sides with salt, pepper, and paprika.
  3. Heat olive oil in an oven-safe skillet over medium-high heat until hot.
  4. Place thighs skin-side down. Cook 6–8 minutes until skin is golden and crisp. Flip and cook 3 minutes on the other side.
  5. Lower heat to medium. Push the chicken to the sides. Add butter to the center of the pan.
  6. When butter melts, add minced garlic and thyme. Cook 30–45 seconds until fragrant. Spoon butter-garlic over the thighs.
  7. Pour chicken broth and lemon juice into the pan. Let the sauce simmer 1–2 minutes.
  8. If using the oven, transfer the skillet to the oven and bake 10–12 minutes until internal temp reaches 165°F (74°C). If not using oven, cover and simmer on stove on low until done.
  9. Remove chicken, let rest 5 minutes. Spoon sauce over servings and garnish with parsley.

Notes

For a creamy garlic sauce, add a splash of cream at the end. Use ghee or olive oil for a dairy-free option.
