A quick and fresh appetizer featuring salty feta and crunchy cucumber, perfect for gatherings or as a light starter.

Ingredients

  • 8 oz (225 g) firm block feta cheese
  • 1 large English cucumber or 2 small Persian cucumbers
  • 12 cherry tomatoes (optional)
  • Black or Kalamata olives, pitted (optional)
  • Fresh herbs: mint or parsley, chopped
  • Extra-virgin olive oil
  • Lemon juice
  • Salt and black pepper
  • Toothpicks or short skewers

Instructions

  1. Pat the feta block dry and cut into 1-inch cubes.
  2. Slice cucumber into thick rounds or half-moons to match cube size.
  3. If using cherry tomatoes or olives, halve the larger items so each skewer balances.
  4. Thread cucumber, feta, and optional items onto toothpicks. Alternate colors for an attractive look.
  5. Arrange on a platter. Drizzle with olive oil, lemon juice, and sprinkle chopped herbs, pepper, and a light pinch of salt if needed.
  6. Serve within an hour for best texture.

Notes

Assemble skewers right before serving for the crispest cucumber. Store any assembled skewers in an airtight container in the fridge for up to 24 hours. For longer storage, keep components separate.
