A quick, hearty turkey taco soup packed with flavor and nutritious ingredients.

Ingredients

  • 1 lb ground turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Toppings: shredded cheese, avocado, cilantro, sour cream

Instructions

  1. In a large pot over medium heat, sauté the chopped onion and minced garlic until softened.
  2. Add the ground turkey and cook until browned.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and chicken broth.
  4. Bring to a simmer and cook for 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with cheese, avocado, cilantro, and sour cream if desired.

Notes

For best results, chop onions and garlic in advance. Avoid overcooking the beans and corn to prevent mushiness. A squeeze of lime juice before serving can enhance the flavor.
