Ingredients

  • Bell peppers (any color)
  • Zucchini
  • Cherry tomatoes
  • Red onion
  • Olive oil
  • Salt and pepper

  • Skewers (wooden or metal)

Instructions

  1. Start by washing and cutting all the vegetables into even-sized pieces.
  2. In a large bowl, combine the vegetables with olive oil, salt, pepper, and dried herbs. Toss until everything is evenly coated.
  3. Thread the vegetables onto the skewers, alternating types for a colorful presentation.
  4. Preheat your grill to medium-high heat.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally.
  6. Grill until the vegetables are tender and have nice grill marks, approximately 10-15 minutes, depending on your grill.
