Instructions

  1. Begin by cutting the chicken breasts into bite-sized pieces.
  2. Season the chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the chicken to the skillet and cook until browned, about 5-7 minutes.
  5. Stir in the minced garlic and cook for an additional minute.
  6. Add the bell peppers, broccoli, and carrots to the skillet. Continue cooking for about 5-7 minutes, or until the vegetables are tender.
  7. Taste and adjust seasoning if necessary, then serve hot.
