Delightful cherry cobbler muffins bursting with sweet cherries, perfect for breakfast, snacks, or dessert.

  • 1 and 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups fresh or frozen cherries, pitted and halved
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare your muffin tin by lining it with paper liners or greasing it.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, cream together the softened butter and egg until smooth. Add the milk and vanilla extract, mixing until well combined.
  4. Slowly add the wet mixture to the dry mixture, stirring gently until combined. Fold in the cherries.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full. Sprinkle brown sugar over the tops before baking.
  6. Bake for 20-25 minutes until a toothpick comes out clean. Let cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.

Notes

Ensure the butter is softened for a smooth mixture. Don’t overmix; a few lumps are okay.
