Crockpot Chicken Stuffing

A warm, simple meal of chicken layered with stuffing, broth, and vegetables, cooked in a slow cooker.

Ingredients

  • 2 to 3 boneless chicken breasts or thighs
  • 1 box seasoned stuffing mix
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 to 3 cups chicken broth
  • 1/2 cup butter or margarine, melted
  • Salt and pepper to taste
  • Optional: frozen peas or carrots, herbs like sage or thyme

Instructions

  1. Spray the crockpot with nonstick spray.
  2. Place the chopped onion and celery in the bottom.
  3. Lay the chicken on top of the vegetables and season with salt and pepper.
  4. Pour the melted butter over the chicken.
  5. Sprinkle the stuffing mix evenly over the chicken and vegetables.
  6. Pour chicken broth slowly over the stuffing.
  7. Cover and cook on low for 4–5 hours or on high for 2–3 hours until chicken is cooked through and stuffing is tender.
  8. Stir gently before serving to mix chicken and stuffing.

Notes

For firmer stuffing, use less broth. For softer stuffing, add more. Leftover storage: Store in fridge for 3–4 days or freeze for up to 2 months.
