  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian)
  • 2 eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil or cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a baking sheet by lining it with parchment paper or greasing it lightly.
  3. In one bowl, beat the eggs.
  4. In a second bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  5. Dip each chicken breast in the egg, allowing excess to drip off, and then coat thoroughly in the breadcrumb mixture.
  6. Place the coated chicken on the baking sheet, spaced apart.
  7. Drizzle or spray with a little olive oil for extra crispiness.
  8. Bake for 20-25 minutes, until golden brown and the chicken is cooked through (internal temperature should reach 165°F or 74°C).
