Enjoy crispy skin and juicy meat with these easy-to-make baked chicken thighs, perfect for weeknight dinners.

  • 6 bone-in, skin-on chicken thighs
  • 1½ tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil or vegetable oil
  • Optional: a squeeze of lemon or chopped parsley to finish

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil or use a rimmed baking tray.
  2. Pat chicken thighs dry with paper towels.
  3. Rub with oil, then sprinkle salt, pepper, paprika, and garlic powder on both sides.
  4. Place thighs skin-side up on the tray with space between pieces.
  5. Bake for 30–40 minutes until skin is golden and internal temperature reaches 165°F (74°C).
  6. Let rest for 5 minutes before serving.

Notes

Use an instant-read thermometer for best results. Pat skin dry and use oil to help browning. For crisper skin, consider broiling for 1–2 minutes at the end.
