Ingredients

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Toppings: sour cream, avocado, cilantro, tortilla chips

Instructions

  1. In a large pot over medium heat, cook the ground beef or turkey until browned.
  2. Add the chopped onion and minced garlic, sauté until softened.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and chicken broth; bring to a boil.
  4. Reduce heat and let simmer for 15-20 minutes.
  5. Stir in heavy cream and cheddar cheese until melted and well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot with your choice of toppings.

Notes

Prep ahead by chopping your onion and garlic in advance. For a thicker soup, blend half of it and mix back in.
