  • 1 lb boneless, skinless chicken breast
  • 1 package store-bought gnocchi
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 cups fresh or frozen spinach
  • Seasonings: salt, pepper, thyme, parsley

Instructions

  1. Chop the carrots, celery, and onion. Mince the garlic.
  2. Place the chicken, chopped vegetables, garlic, and broth into the crockpot.
  3. Set the crockpot on low for 6-8 hours or high for 3-4 hours.
  4. When the cooking time is up, remove the chicken, shred it, and return it to the pot.
  5. Stir in the gnocchi and heavy cream, cooking for another 30 minutes until the gnocchi is tender.
  6. Add fresh or thawed spinach just before serving. Stir until wilted.

Notes

For added flavor, consider incorporating red pepper flakes or a touch of lemon juice. Store leftovers in the fridge for up to 3 days.
