Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing for about 3-4 minutes until they are soft.
  3. Stir in the shredded chicken and cook for another 2 minutes.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add in the fresh spinach and let it wilt.
  6. Pour in the heavy cream and stir until well mixed.
  7. Season with salt and pepper to taste before serving.

Notes

For a creamier texture, blend a portion of the soup before adding the cream. You can use frozen spinach as a substitute for fresh.
