  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil or butter
  • Seasonings (like thyme, salt, and pepper)

Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add diced onion, carrot, and celery. Sauté until the vegetables are tender.
  2. Stir in minced garlic, cooking for an additional minute.
  3. Add the shredded chicken and rice, stirring to combine.
  4. Pour in the chicken broth, bringing the mixture to a boil.
  5. Reduce the heat and let the soup simmer until the rice is cooked through.
  6. Finally, stir in the cream and season with thyme, salt, and pepper.

Notes

For a lighter version, substitute cream with coconut milk or cashew cream. Brown rice can be used for a healthier option.
