Creamy Chicken and Mushroom Stroganoff

A cozy and hearty dish featuring tender chicken, earthy mushrooms, and a rich creamy sauce, perfect for a quick weeknight meal.

Ingredients

  • 1 lb chicken breasts or thighs, cut into strips or cubes
  • 8 oz mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter or oil
  • 1 cup chicken broth
  • 1 cup sour cream or Greek yogurt
  • 1 tbsp Dijon mustard (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Cooked egg noodles, rice, or mashed potatoes for serving

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat butter or oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
  3. In the same pan, add a little more oil if needed and sauté onions until soft, about 3 minutes. Add garlic and mushrooms and cook until mushrooms give off moisture and brown, another 5–6 minutes.
  4. Pour in chicken broth and bring to a simmer, scraping up browned bits. Stir in Dijon mustard if using.
  5. Lower heat and stir in sour cream until smooth. Return chicken to the pan and warm through, but do not boil once sour cream is added. Adjust salt and pepper.
  6. Serve over cooked egg noodles, rice, or mashed potatoes. Garnish with parsley.
