Ingredients

  • 2 cups elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot, add elbow macaroni, and cook according to package directions until al dente. Drain and set aside.
  2. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
  3. Gradually add the milk while whisking, and keep stirring until it thickens.
  4. Remove from heat and stir in shredded cheddar cheese until melted and smooth.
  5. Add the cooked macaroni to the cheese sauce and stir to combine. Season with salt and pepper to taste.
  6. Enjoy immediately, or transfer to a baking dish for a baked version.

Notes

To reheat, add a splash of milk if the cheese sauce is too thick.
