  • 1 cup fresh or frozen cranberries
  • 1 cup granulated sugar
  • ½ cup orange juice
  • 2 eggs
  • ½ cup vegetable oil
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • Zest of one orange

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the orange juice, eggs, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the cranberries and orange zest gently.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow it to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

To ensure a soft loaf, be careful not to overmix the batter. Store in an airtight container at room temperature for a few days.
