These bite-sized meatballs pair savory ground meat with a sweet-tart cranberry glaze for a festive dish that’s perfect for holiday gatherings and weeknight dinners.

Ingredients

  • 1 lb ground beef or ground turkey (or a 50/50 mix)
  • 1/2 cup fine breadcrumbs (regular or gluten-free)
  • 1 large egg (or 1 tbsp ground flax + 3 tbsp water for egg-free)
  • 1/4 cup finely chopped onion
  • 1 garlic clove, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cranberry sauce (whole berry or jellied)
  • 1/4 cup ketchup
  • 2 tbsp brown sugar (or maple syrup)
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 tbsp olive oil (for baking sheet or pan)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment or lightly oil it.
  2. In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, parsley, salt, and pepper. Mix gently until combined.
  3. Form 1- to 1.5-inch meatballs with damp hands. Place on the prepared sheet.
  4. Bake for 18–22 minutes, until cooked through and lightly browned.
  5. Meanwhile, make the glaze: in a small saucepan, combine cranberry sauce, ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Warm over medium heat, stirring until smooth and slightly thickened (about 5 minutes).
  6. Toss baked meatballs in the glaze or spoon glaze over them and return to oven for 3–5 minutes to set. Serve warm.

Notes

These meatballs are versatile; you can use ground turkey for a lower fat option or opt for a vegan option using a commercial egg replacer or flax egg.
