  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups fresh cranberries
  • 2 medium apples, peeled and diced
  • 3 medium carrots, sliced
  • 2 stalks celery, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 teaspoons thyme (dried or fresh)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened.
  2. Add the beef stew meat, browning it on all sides.
  3. Pour in the beef broth, adding the cranberries, apples, carrots, celery, thyme, salt, and pepper. Stir to combine everything well.
  4. Bring the mixture to a simmer, then cover and let it cook on low heat for about 90-120 minutes, or until the beef is tender.
  5. Taste and adjust seasoning if needed before serving hot.
