A comforting and creamy zucchini soup that’s perfect for chilly days, packed with fresh flavors and nutrition.

Ingredients

  • 3 medium zucchinis, chopped
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or a non-dairy alternative)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat a bit of olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until soft, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped zucchini and sauté for about 5-7 minutes.
  5. Pour in the broth and let it simmer for about 15 minutes, allowing the zucchini to soften.
  6. Use an immersion blender to puree the soup until smooth. (If you don’t have one, you can carefully transfer it to a regular blender.)
  7. Stir in the heavy cream and season with salt and pepper to taste. Heat through and serve.

Notes

For a richer flavor, consider roasting the zucchini before adding it to the pot. Adjust seasoning as you blend.
