A creamy and flavorful Slow Cooker Broccoli Cheddar Soup that combines broccoli and cheddar cheese for a comforting meal.

Ingredients

  • 4 cups broccoli florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream (or milk)
  • Salt and pepper, to taste

Instructions

  1. Place the broccoli, onion, and garlic in your slow cooker.
  2. Pour in the vegetable or chicken broth.
  3. Set your slow cooker on low for 4-6 hours or high for 2-3 hours.
  4. When the time is up, stir in the shredded cheddar cheese and heavy cream.
  5. Blend the soup until smooth, if desired. Otherwise, leave it chunky!
  6. Season with salt and pepper to taste, and serve warm.

Notes

For a dairy-free option, use coconut milk and dairy-free cheese. Can be frozen for up to 3 months.
