Creamy, healthy pasta sauce made with blended cottage cheese.

Ingredients

  • 1 ½ cups cottage cheese
  • 2 cloves garlic
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 8 oz pasta
  • Fresh herbs for garnish

Instructions

  • Cook pasta according to package instructions.
  • While pasta cooks, blend cottage cheese, garlic, olive oil, salt, and pepper until smooth.
  • Drain pasta, reserving some cooking water.
  • Toss pasta with sauce, adding pasta water as needed to thin.
  • Serve with fresh herbs.

Notes

You can add spinach, roasted vegetables, or red pepper flakes for variation.
