Creamy, protein-packed cottage cheese egg bites baked to perfection an easy, customizable breakfast staple.

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or Gruyère)
  • 1/4 cup chopped spinach
  • 1/4 cup cooked bacon, crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (160°C) and prepare a water bath.
  2. Blend eggs and cottage cheese until smooth.
  3. Stir in shredded cheese, spinach, Beef Bacon, salt, and pepper.
  4. Pour mixture into greased muffin tin.
  5. Place muffin tin in a larger baking dish filled with about 1 inch of hot water.
  6. Bake for 25–30 minutes until just set and slightly jiggly in the center.
  7. Cool slightly before serving

Notes

Store in refrigerator up to 4 days or freeze up to 2 months. Reheat in microwave before serving.
