Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup corn (frozen or canned)
  • 1 cup green beans (frozen or canned)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup heavy cream (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the ground beef and cook until browned.
  3. Add the chopped onion, carrots, and celery; sauté until softened.
  4. Stir in the minced garlic and cook for another minute.
  5. Pour in the beef broth and add the diced tomatoes, corn, green beans, Italian seasoning, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for about 30 minutes.
  7. If using, stir in heavy cream just before serving for a richer flavor.
  8. Serve hot and enjoy!

Notes

For extra flavor, brown the meat with a pinch of salt. Pre-chop your vegetables ahead of time for easier cooking. To thicken the soup, allow it to simmer longer or mash some of the beans.
