A warm and comforting soup featuring fresh vegetables and hearty cabbage, perfect for any time of the year.

Ingredients

  • 1 small head of green cabbage, chopped
  • 2 carrots, diced
  • 1 large onion, diced
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 1 can of diced tomatoes (14.5 ounces)
  • 4 cups of vegetable broth
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Optional toppings: fresh herbs, croutons, or a sprinkle of cheese

Instructions

  1. In a large pot, heat a bit of oil over medium heat.
  2. Add the onion and garlic, and sauté until the onions are translucent.
  3. Stir in the carrots and celery, cooking until they begin to soften.
  4. Add the chopped cabbage and cook for an additional 5 minutes.
  5. Pour in the diced tomatoes and vegetable broth, and stir in the thyme.
  6. Bring the soup to a gentle boil, then reduce heat and let it simmer for about 30 minutes.
  7. Season with salt and pepper to taste before serving.

Notes

For an extra protein boost, consider adding beans or swapping vegetables according to preference. Store in an airtight container for up to 4 days or freeze for later enjoyment.
