A colorful and delicious vegetable dish from France, perfect for showcasing fresh summer produce.

  • 1 eggplant, diced
  • 2 zucchinis, sliced
  • 2 bell peppers (any color), chopped
  • 1 onion, chopped
  • 2 cups ripe tomatoes, chopped (or 1 can of diced tomatoes)
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté the onions until they are soft.
  3. Add the eggplant and cook for about 5 minutes.
  4. Stir in the zucchinis and bell peppers, cooking until they begin to soften.
  5. Add the garlic and tomatoes, followed by thyme, basil, salt, and pepper.
  6. Reduce heat to low, cover the skillet, and let it simmer for about 20-30 minutes, stirring occasionally.
  7. Adjust seasoning as needed, and serve warm or at room temperature.

Notes

For the best texture, cut your veggies evenly and avoid overcrowding the skillet. Ratatouille can be made ahead and tastes even better the next day.
