A heartwarming and nourishing classic chicken noodle soup perfect for chilly days and comfort meals.

Ingredients

  • 1 pound chicken breast
  • 8 ounces egg noodles
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add chopped onions, carrots, and celery; sauté until softened.
  3. Add minced garlic and cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add chicken breast and cook until no longer pink, about 10-15 minutes.
  6. Remove chicken, shred it, and return to the pot.
  7. Add egg noodles and simmer until cooked.
  8. Season with salt, pepper, and parsley before serving.

Notes

Prep ahead by chopping veggies and chicken to save time. For thicker soup, let it simmer longer before adding noodles.
