Delicious pancakes infused with pumpkin and warm spices, perfect for a cozy fall breakfast.

  • 1 cup pumpkin puree
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup cinnamon sugar (for swirl)

Instructions

  1. In a bowl, whisk together pumpkin puree, milk, eggs, and melted butter until smooth.
  2. In another bowl, mix together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  4. Preheat a skillet over medium heat and grease lightly.
  5. Pour batter onto skillet, and using a spoon, swirl in cinnamon sugar while the pancake cooks.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with maple syrup or additional cinnamon sugar.

Notes

Don’t overmix the batter for fluffy pancakes; lumps are okay! Let the batter rest for a few minutes before cooking for a lighter texture.
