Delicious and comforting muffins combining the flavors of cinnamon and sugar, resembling classic donuts.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)
  • ½ cup melted butter (for dipping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the eggs, then add the milk, vegetable oil, and vanilla extract. Mix until combined.
  4. Gradually add the wet ingredients to the dry mixture, stirring gently until just combined.
  5. Fill each muffin cup about ¾ full with the batter.
  6. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the muffins are cooling, mix the sugar and cinnamon together in a small bowl.
  8. Dip the tops of the warm muffins in melted butter, then roll in the cinnamon sugar mixture.

Notes

Using room temperature ingredients can help create a better texture. Store leftovers in an airtight container for up to three days.
