A warm and comforting Chickpea Potato Soup packed with flavors and nutrients, perfect for chilly evenings.

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional: spinach or kale for added greens

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Stir in the minced garlic and sliced carrots, cooking for another minute until fragrant.
  3. Add the diced potatoes and chickpeas, then pour in the vegetable broth.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  5. Season with salt and pepper to taste. If using spinach or kale, stir it in just a few minutes before serving until wilted.
