A comforting and fancy dish combining chicken, mushrooms, and Madeira wine, perfect for any occasion.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken breasts and cook until browned on both sides, about 5-7 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, add the sliced mushrooms and sauté until golden brown.
  5. Pour in the Madeira wine and chicken broth, scraping the bottom of the skillet to deglaze.
  6. Return the chicken to the skillet and bring to a simmer.
  7. Cover and cook for about 15 minutes, or until the chicken is cooked through.
  8. Remove the chicken and stir in the heavy cream to create a sauce.
  9. Serve the chicken topped with the mushroom sauce and garnish with fresh parsley.

Notes

Use a good quality Madeira wine for the best flavor. Adjust seasoning with salt and pepper to taste before serving.
