  • 2 pounds chicken bones, preferably roasted
  • 1 onion, chopped

  • 2 celery stalks, chopped
  • A few sprigs of thyme
  • A few sprigs of parsley
  • Optional: garlic and peppercorns
  • Water, enough to cover all ingredients

Instructions

  2. In a large pot, place the chicken bones, vegetables, herbs, and any optional ingredients.
  3. Pour in enough water to cover the ingredients.
  4. Bring to a boil, then reduce the heat and let it simmer for at least 240 minutes (4 hours).

Notes

Store in airtight containers for up to a week in the fridge or freeze for up to 3 months. Reheat gently over low heat to avoid boiling.
